These potatoes are perfect for the passing shopper that wants a bag of potatoes but does not want to waste them by buying too many.

These are also available in a range of red and white varieties. Packed in a polythene bag it is important to keep them stored in a cool, dry, dark place.

Peal and par-boil the potatoes so that the outsides are just turning soft. Drain and leave to steam off some of the moisture. In a roasting tray melt some fat and make sure it is hot. Shake the potatoes about so that the surface begins to break up (these will be the crispy bits!) before putting them into the hot fat. Roast in the oven until golden brown and crispy.
